Going alphabetically or by sign-up time tends to favor the same people first (or last) every time. A random draw removes that pattern entirely, so no one can predict or negotiate their spot, and the process feels visibly fair to everyone in the room.
Sometimes one slot needs to stay fixed — the keynote speaker going last, or someone who requested to go first. Lock that name's position (or use "Preserve first position" / "Preserve last position" as a shortcut), and every reshuffle after that only re-randomizes the unlocked names, leaving locked spots untouched.
